Mike Heindl's Famous Oatmeal Cookies

Many of you 29ers have been asking for the recipe to my coconut oatmeal cookies. I however can't take credit for these sweet, crunchy, buttery wonders. They are the creation of our first neighbors & dear friends the Heindls. Much like us, my parents started married life in the middle of no where...Iowa City, Iowa. My dad worked long hours as a Urology Resident at the University Hospital and my mom was left with two little girls in the frozen tundra of the mid-west. Mike & Diane, befriended the newly established Humphries Family when they needed it most. May these cookies be a reminder of the priceless gift of good neighbors & great friends!

Mix dry ingredients together & set aside
  • 4 cups flour
  • 3 cups oats
  • 2 cups coconut flakes
  • 2 teaspoons baking soda
  • 1 teaspoon salt
Cream together
  • 2 cups butter
  • 1 cup white sugar
  • 1 cup brown sugar

then add the eggs & vanilla

to the creamed mixture

  • 2 eggs beaten
  • 2 teaspoons vanilla

Add the dry mixture one cup at a time to the, somewhat wet mixture

These Cookies will test the strength of your Kitchen Aide Mixture.

Remember all things from the Mid-West are Hearty!

Place tablespoon mounds on an ungreased cookie sheet

Bake @ 350 for 8-10 minutes

As soon as you pull them out

smash one Hersey square on the middle.

    Let Cool & Enjoy!
    I suggest waiting for the chocolate to remelt
    before stacking them on top of each other.

I made them and they are deeelicious! i stuck them in the freezer to keep loner and we're still eating them - so good! thanks for the recipe!

Jude and I were checking out your blog ... it's been a while... and when we came to these pics he kept saying "wow!" and "mmmmmmm" I think he would have like to reach his little boy hands right through the screen to eat these. Mommy will have to make some soon! :)
